For 8-10 years now i have been smoking 'casually' - meaning i can smoke for a month and then not smoke again for 4-5 months or more, smoke for 2 days hardcore, and not want one or have any desire for one for many months.
Is getting or being addicted something that comes on from more then just doing a substance? Is there personality, body chemistry, social environment, and other factors that combine to determine addiction? Or does it just come down to the simple fact that i dont want to do it all the time?

Most smokers start off this way. Nobody wakes up and says "I think I'll become a 2 pack a day smoker today!"
you probably have a social environment in which you smoke which does not occur very often, so the influence is not there.
You could become a regular smoker any time, due to a number of factors.
My guess is that you're smoking in a very specific context, therefore your addiction (at the moment) is highly context specific.
